Let boil spinach, squeeze dry and chop finely, place in a bowl and add the cottage cheese by mixing the dough until it becomes soft, salt and season with a little pepper; then add eggs and grated Parmesan.
Form of pellets and then pass them in flour and immerse them one at a time into the boiling water, just removing them with the skimmer after a few minutes when they are afloat.
Drizzle with butter and cheese.
