Malfatti spinach
Instructions
Boil the spinach, Mashers and pass them to make them taste the butter, add the yolks, ricotta, nutmeg, pepper and salt.
Make balls the size of walnuts, flour them and throw them in boiling salted water.
When they come to the surface, drain and place in a buttered baking dish, sprinkle with the parmesan and butter and put them for 10 minutes in the oven.

- 450 g of frozen spinach
- 250 g of ricotta
- 80 g of butter
- 1 egg yolk
- Grated parmesan cheese
- Little of flour
- Nutmeg
- Pepper
