Instructions

Boil 200 cl of salt water.

Dip the meat and cook on moderate fire for 1 hour and a half, often schiumandola.

Remove the meat, cut it into slices and place on serving dish.

Prepare a sauce by whisking the oil with lemon juice, salt and chopped parsley.

Pour the sauce over the meat and let it marinate a few hours before serving.
