Instructions

Put in a saucepan two litres of salted water, bring to a boil, dip the meat and cook for about 1 hour and 30 minutes at moderate flame and skimming often.

Sprinkle the lemon juice with oil and salt, pour it over the meat cut into slices, let marinate for 2 hours and serve.
