Mada
Instructions
Pour the broth into a saucepan, bring it to a boil and join rain semolina with a pinch of salt.
Simmer, stirring with a wooden spoon, for 30 minutes.
Remove from heat and, stirring, add 60 g of butter, parmesan and pepper.
With the remaining butter 6 ramekins aluminum grease (Mada), sprinkle them with bread crumbs and with a spoon, cover the bottom and walls with a thick layer of semolina.
Thinly slice the cheese and place it inside the Mada.
Shelled eggs, put one in each stencil without breaking the yolk.
Cover each egg with semolina remained and put in oven at 180 degrees for 6-8 minutes.
Suggested wine: Valcalepio bianco.

- 280 g of semolina
- 150 g of gruyere cheese
- 80 g of butter
- 100 cl of meat broth
- 20 g of grated parmesan cheese
- 20 g of breadcrumbs
- 6 eggs
- Salt
- Pepper
- To embellish the mada:
- Dice 1 of black truffle
