Marinated Anchovies (Marinata di Acciughe)
Instructions
Eviscerated the anchovies off their head, then open them along the ventral, spinatele line and so open to book, put them in a dish, season with the juice of half a lemon, a pinch of salt, a ground pepper, slices of fresh garlic, a little oil, then let marinate in a cool place, covered with foil, for at least 2 hours.
Serve with a cucumber slices, Arugula, Endive and half head of sprouts, all seasoned with a prepared mix 80 g citronnette oil, salt, pepper, the juice of half a lemon and a teaspoon of mustard, to obtain a perfect emulsion.
Ingredients and dosing for 4 persons
- 400 g of fresh anchovies
- 1 cucumber
- 1 bunch of arugula salad
- 1 pack of sprouts (alfalfa or radish)
- 1/2 head of frisee salad
- Garlic
- 1 lemon (juice)
- 1 teaspoon of mustard grains
- Olive oil extra virgin
- Salt
- Peppercorns
