Salmon marinade
Instructions
Cut into 1 cm cubes.
of the 900 g of pulp of fresh salmon.
Boil together with 1/2 liter of water, 1/2 litre of white wine vinegar, 3 teaspoons of sugar, 1/2 teaspoon salt, 1 sliced onion 1 lemon, unpeeled, sliced 1 teaspoon black peppercorns.
After 5 minutes of gentle boiling, pour hot marinade over salmon, add 1 teaspoon fresh tarragon and place the entire fridge and stand for 4 days mixing it well once a day.
Serve with warm homemade bread.
