Go first in flour, then in egg and bread crumbs, Eggplant slices first put in salt to lose water.
FRY in hot oil, lay them on a baking sheet, sprinkle with grated Parmesan and pass them in a hot oven at 200 degrees for a few minutes to melt the cheese.
