Melanzane alla siciliana
Instructions
Slice the eggplant, salt them and make them lose water for 30 minutes.
Dry and arrange a layer in a buttered baking dish, sprinkle 2 sliced eggs, some piece of anchovy, a little pitted olives, tomato sauce, grated pecorino, oregano and pepper.
Continue so until exhaustion ingredients.
Finish with the remaining sauce, pecorino, oregano and a drizzle of olive oil.
Bake in hot oven at 200 degrees for about 30 minutes.

- 4 eggplant
- 4 hardboiled eggs
- 50 cl of sugo al pomodoro
- 5 anchovies water
- Black olives
- Butter
- Grated pecorino cheese
- 1 thread of olive oil
- Salt
- Oregano
- Pepper
