Eggplant with mozzarella
Instructions
Wash and peel the eggplants, then cut into slices horizontally.
Beat the eggs and go inside the slices of Eggplant, flour them and fry them in hot oil.
Meanwhile put to Brown the garlic, which will be lifted just Golden.
Then add the tomatoes, season with salt, and cook for 3/4 hour.
When cooked in a nonstick baking sheet, spread a layer of gravy, and above it, a fried eggplant.
Over each Eggplant put a slice of mozzarella which we previously cut, then cover each slice with one of similar size.
Sprinkle with Parmesan, and cover with the remaining sauce.
Pass in a hot oven (150 C degrees) for 15 minutes.
Suggested wine: a red light, for example a Frascati.

- 3 eggplant
- 500 g of mozzarella
- 2 eggs
- 200 g of flour
- 500 g of peeled tomatoes
- Grated parmesan cheese
- Garlic
- Salt
- 4 tablespoons of olive oil
