Tasty aubergines
Instructions
Wash the eggplants and cut into thin strips, add salt and let them drain.
Peel peppers and cut them into strips.
Put the Eggplant to frying, with peppers, in plenty of oil.
When they are dried, place the layered vegetables in a salad bowl.
Sprinkle with sliced garlic and mint and serve with a glass of vinegar boiled.
Mix and serve cold on the table.

- 1500 g of eggplant
- 500 g of peppers
- Garlic
- Fresh mint
- Olive oil
- Wine vinegar
- Salt
