Potato soup, eggplant and peppers
Instructions
In a pot with oil fry the garlic, just delete it, Golden, add the potatoes, eggplants and peppers into small pieces.
Pour a little water, add salt and cook over low heat, stirring often.
When cooked, place a pinch of oregano.

- 4 potatoes
- 3 eggplant
- 2 sweet yellow peppers
- 1 red pepper
- 3 cloves of garlic
- 10 cl of olive oil extra virgin
- 1 pinch of oregano
