Neapolitan rice soup
Instructions
Cut the cabbage into strips and wash it well.
Make a chopped Bacon and garlic.
Boil 125 cl water just salty.
When it boils add the cabbage, chopped Bacon and garlic, chopped onion.
Cover and cook for 1 hour.
Add the rice and while it cooks, mince the caciocavallo.
Add to rice 2-3 minutes before it's cooked.
When cooked remove from heat and sprinkle with grated cheese.
Ingredients and dosing for 4 persons
- 200 g of semi-fine rice
- 100 g of pork lard
- 100 g of caciocavallo cheese dry
- 1 onion
- 1 cabbage
- 1 clove of garlic
- Salt
- Grated pecorino cheese
- Grated parmesan cheese
