Pumpkin Soup (Minestrone di Zucca)
Instructions
Soak mushrooms in warm water.
Clean the pumpkin and slice it.
Brown the sliced onions in oil and butter, add the pumpkin and cook for 5 minutes.
Add sliced apples, cauliflower and chopped mushrooms, sprinkle with salt, add the hot broth.
Simmer for 45 minutes then pour the rice into the soup and bring it to cooking.
Before serving, add salt, add 4 tablespoons of cream and stir well.

- 1000 g of pumpkin
- 2 onions
- 2 apples
- 20 g of dried mushrooms
- 300 g of florets of cauliflower
- 120 g of rice
- 150 cl of vegetable broth
- Butter
- Olive oil
- 4 tablespoons of cream
