Instructions
Slice the Eggplant and put them to soak in salted water for 1 hour.
Scald the tomatoes, Peel, mash.
Saute chopped onions in oil, then add the meat and Brown.
Combine nutmeg, oregano, 1 pinch of salt and sugar, pepper, tomatoes, parsley and cook over low heat for 30 minutes.
Fry the eggplant.
In a pan layering Eggplant cover with shredded cheese, meat and sauce.
Bake at 180 degrees 1 hour.
