Beat the egg yolks with sugar, add the zest of 1 orange, washed and left untreated.
Add, a little at a time, the orange juice and flour.
Put on low heat and bring to a boil, stirring.
Remove from heat and allow to cool.
Gently incorporate the egg whites very firm.
Distribute the cream in glass cups and put them in the refrigerator until serving.
