Lemon mousse (2)
Instructions
Peel the lemons 3 live and soak the rinds in cold water for 1/2 day.
Squeeze the juice of the lemons, filter it and add to the water from which you deleted the rinds.
Combine the sugar and bring to a boil.
Add the corn starch diluted in a little cold water and stir with a whisk for 3-4 minutes.
Pour the custard into 6 ramekins and place in refrigerator for at least 2 hours.
Serve the mousse garnished with cookies.

- 5 lemons
- 100 cl of water
- 30 g of corn starch
- 150 g of sugar
