Nests at prague ham
Instructions
Very finely chop the shallot.
Cut the ham into strips.
In a pan, braise in sweet shallot flame with 50 g of butter and a few tablespoons of broth.
After 5-6 minutes, add the peas and let stand for 10 minutes, adding stock as needed (the mixture should be soft, but not excessively at).
Season with salt and pepper.
Turn off the heat and keep aside.
Meanwhile, melt the butter in a small frying pan and, when it is foamy, add the ham, season with grated nutmeg and let it season 2-3 minutes.
Cook the noodles in salted water.
Meanwhile rekindle a fire under the peas, add the vegetable cream and a little spoon of curry powder, stir to mix everything.
Drain the noodles al dente (keep aside some of the cooking water which will serve If the sauce gets too dry), pour the pasta into the pan with the peas, combine the Prague ham and a dash of sunflower seeds.
Do jump quickly to moderate flame and, if necessary, add a little of the pasta cooking water.
Sprinkle with grated Parmesan and give even a sprinkling of white pepper.
Serve immediately.
Note: the taste of curry should not dominate on other flavors.

- 250 g of type noodles pasta (nidi)
- 100 g of fine peas
- 100 g of prague ham cut often
- 60 g of butter
- 1 tablespoon of curry
- 1 shallot
- Grated 1 of nutmeg
- 1 pinch of sunflower seeds
- Grated parmesan cheese
- 150 cl of vegetable cream
- A few tablespoons of vegetable broth
- Salt
- Pepper
- White pepper
