Alla caprese omelette
Instructions
Pitted olives, cut into slices the mozzarella and cherry tomatoes.
Beat the eggs in a bowl with the Parmesan, salt and pepper in a macinatina; Cook the mixture in two batches, using a pan of 15-16 cm in diameter greased with a tablespoon of oil, so as to obtain two equal omelette.
Spread the slices of mozzarella and tomatoes on omelettes, in equal parts, guarnitele with olives, capers and basil leaves; Sprinkle with a little salt, pepper and oregano, flavour them with the rest of the oil and serve immediately as is or folded in two.

- 2 eggs
- 1 tablespoon of grated parmesan cheese
- 4 tablespoons of olive oil
- 3 mozzarella with cherry
- 3 tomatoes
- 5 basil leaves
- 12 black olives
- Some of capers
- 1 pinch of oregano
- Salt
- Pepper
