Mint omelette
Instructions
Beat the eggs with half the Parmesan, salt and chopped parsley.
Grease a pan of 12 cm in diameter, thin pancake bake a lot.
Let cool and cut into strips.
Saute the chopped onions with the garlic and 3 tablespoons oil.
Add the tomato, salt, chilli, mint leaves and cook for 10 minutes.
Join the omelet and sprinkle with Parmesan.

- 6 fresh eggs
- 500 g of tomato pulp
- 150 g of grated parmesan cheese
- 1 bunch of fresh mint
- 2 cloves of garlic
- 1 scallion
- Parsley
- 3 tablespoons of olive oil
- Salt
- Hot pepper
