Instructions
In a bowl beat the eggs, add the necessary salt, a pepper macinatina, a rub of nutmeg and 1 tablespoon grated Parmesan; beat again until you get a homogeneous mixture.
After that, heat a cast iron pan on the heat, then add the olive oil, which must immediately sizzle, and immediately after the egg mixture; with a hand shake the Pan by the handle and the other spread the mixture over the bottom of the bowl, using a fork.
Cook for 2-3 minutes at a moderate heat, then slide the omelet with back of fork to the side opposite the handle of the Pan, grasp it firmly and moving your wrist, you make the pan a quick movement from top to bottom in order to flip the omelet and let it fall to the bottom of the pan.
Let it cook for the same time on this side, then put it on the serving dish and serve immediately.
