Instructions
Clean, wash the fish, add salt, pepatela, put it in a pan and let it cook, over medium heat, 4 tablespoons of heated oil with garlic and a sprig of thyme.
Then sprinkle with the white wine and the fish fumet, then iron the paper in the oven at 150 degrees for 45 minutes, combining, half-cooked, whole tomatoes and, if desired, 50 g of black olives.
Serve the fish with the sauce and a garnish of aromatic herbs (parsley, thyme).
