Base for fruit ice creams intended to fill
Instructions
Beat the egg yolks with sugar; then join, a little at a time, the cream, working with a wooden spoon.
Separately, beat the egg whites until foamy; then add them to the mixture, adding a pinch of salt.
The preparation should not be cooked.
Fruit stuffed then goes in the freezer for a variable time depending on the chosen fruit quality and also the size of the fruit.

- 5 egg yolks
- 150 g of sugar
- 250 g of whipping cream
- 25 cl of egg whites
- Salt
