Instructions
Dip for 20 seconds in 1/2 liter of cold water acidulated with vinegar 4 tablespoons, 8 galettes (Ligurian Cakes, savoury pies, similar to the friselle, not sweet ones!).
Pull them out and arrange them on a serving dish.
Pour over chopped 4 ripe tomatoes.
Season with salt, pepper, 1 tablespoon of capers, desalted and finely chopped 1 pinch of oregano and olive oil.
Cover with inverted plate and let stand for 30 minutes.
Serve with radishes and celery sticks.

- 50 cl of cold water
- 4 tablespoons of wine vinegar
- 8 savory cakes
- 4 ripe tomatoes chopped

- 1 tablespoon of desalted and finely chopped capers
- 1 pinch of oregano
- Olive oil
- Some of radishes
- Some coasts of celery
