Pappardelle pasta with mascarpone cheese
Instructions
In a bowl beat the egg yolk with the mascarpone, work the mixture until it is soft, add salt and pepper.
Cook the pappardelle al dente in salted water, seasoning them with the prepared sauce and plenty of Parmesan, sprinkle with grated truffle and serve.

- 400 g of type fresh pappardelle pasta
- 100 g of mascarpone
- 1 egg
- Grated parmesan cheese
- 1 grated of truffle
