Pappardelle alla zucca
Instructions
In a large skillet to Brown the chopped onions in oil; combine the diced pumpkin; season with salt; combine the broth.
Cook until the pumpkin becomes creamy.
Apart boil the noodles, drain and add to the pumpkin; Let stand for 1 hour; drizzle over pecorino and serve with chopped parsley.
Ingredients and dosing for 4 persons
- 400 g of type fresh pappardelle pasta
- 400 g of already cleaned pumpkin
- 3 tablespoons of olive oil extra virgin
- 1 clove of garlic
- 1 ladle of vegetable broth
- 40 g of grated pecorino cheese
- Salt
- Chopped parsley
