Passatelli in brodo (3)
Instructions
Mix the breadcrumbs with the Parmesan, butter, lemon rind, beaten eggs with salt, pepper and grated nutmeg.
Mix everything together until mixture is firm.
Form the passatelli using the special tool.
Bring to a boil, add the broth and passatelli as they are afloat, transfer the soup in plates and serve with plenty of grated Parmesan.

- 100 g of breadcrumbs
- 2 eggs
- Abundant of grated parmesan cheese
- Butter
- 100 cl of chicken soup
- 1/2 lemon (zest)
- Grated nutmeg
- Salt
- Pepper
