New potatoes steamed with salmon roe
Instructions
Peel the potatoes and cook in the steam for 10 minutes.
The steamer water flavoured with shallot washed away and cut in half and with a sprig of parsley.
Remove all the stems and the leaves more yellowed from parsley and finely tritatelo.
Remove the potatoes from the steamer and cut a small slice from the wide end to act as a base.
On the other side take a little digging with a spoon.
Place the potatoes on serving plates and sprinkle with chopped parsley.
With a distributed recesses the spoon salmon ROE.
Served before the potatoes become cold.
Ingredients and dosing for 4 persons
- 300 g of very small new potatoes
- 100 g of canned salmon eggs
- 2 shallots
- 1 bunch of parsley
