Orange Bavarois (Bavarese Orange)
Instructions
Mix in a saucepan the yolks, sugar, zest and orange juice, add the hot milk and cook the custard until it thicken.
Remove from heat, and mix in the isinglass soaked in cold water and squeezed and let cool.
Prepare the crisp making dissolve sugar in a pan and then writing mixing almonds.
When it is finely and add tritatelo cold cream with orange liqueur.
Stir the whipped cream and spread the cream into 6 ramekins from portion of capacity of 12 cl each.
When the Bavarians are well cool, sformatele and serve accompanied by chocolate sauce made by melting in a pan, chocolate icing with cream.
Ingredients and dosing for 6 persons
- 2 cl of orange liqueur
- Chocolate frosting (see recipe)
- 2 tablespoons of cream
- For the cream:
- 3 egg yolks
- 50 g of sugar
- 1 orange (juice and zest)
- 25 cl of whipped
- 4 sheets of isinglass
- 25 cl of milk
- For the crispy:
- 50 g of almonds
- 80 g of sugar
