Penne with sausage and eggplant
Instructions
Sauté chopped onion in a couple of tablespoons of oil, then add the sausage blanched, peeled and crumbled, letting it cook for a few minutes, then add the wine and let it evaporate.
Combine the diced eggplant in a colander with a pinch of salt, because they lose water.
Join the already seared and pepper into strips skinned, red pepper, stir and season 5 minutes; add chopped tomatoes, oregano, salt and pepper and simmer in covered container, for 20 minutes on low heat.
Finally, sprinkle with chopped parsley with garlic, Cook for 10 minutes and then dress the pasta with grated Parmesan cheese.
