Grilled Swordfish (Pesce Spada Alla Griglia)
Instructions
Mix in a bowl, a glass of dry white wine, a spoonful of chopped parsley, a pinch of oregano, salt and pepper and a good ground.
Wash swordfish slices under running water, dry them with a cloth tamponandole and sprinkle them with salt and pepper, then emerge them in white wine marinade and let stand for at least two hours.
After this time, drain the slices of swordfish and incidetene the surface using a small knife.
Logs each slice with garlic slices and pieces of Rosemary, then cook on hot grill for about a quarter of an hour.
Remember to turn the slices of swordfish and brush on occasionally with the marinade.
Half-cooked sprinkle on both sides with a layer of breadcrumbs.
Meanwhile, in a small saucepan mix the finely chopped anchovies, half a glass of olive oil and the zest of a lemon.
You heat this sauce for a few minutes at moderate heat, then serve it with fish.

- 4 slices of swordfish (150 g each)
- 2 cloves of garlic
- 4 anchovy fillets
- 1 lemon
- 1 glass dry white wine
- 1 tablespoon of chopped parsley

- 1 tablespoon of breadcrumbs
- 1/2 cup of olive oil
