Beating the Octopus, peel them, remove the ink bladder and eyes and wash them.
Put them in a crock pot with olive oil, salt, pepper cut in thin slices and chopped parsley.
Cover and cook for 2 hours, without ever uncover, moderate focus.
Before serving, cut into pieces and toss polyps with a sauce made by whisking together oil, salt and lemon juice.
