Octopus Salad (Polipo in Insalata)
Instructions
Clean the Octopus taking away the bleb and eyes and insistently tenderise using a meat mallet to make the meat more tender.
Dip the Octopus in boiling salted water where you put a Laurel leaf.
Cook for about an hour and try with a fork if it is cooked.
Allow to cool in its water, then spellatelo and cut it into small pieces.
Prepare the sauce for the topping and mix together the parsley, garlic, chilli, some tablespoons oil, lemon juice and salt.
Wet the Octopus with sauce and serve.

- 1 polyp from 1000 g
- 1 clove of garlic
- 1 leaf of laurel
- Parsley
- 1 spicy chili
- Lemon juice
- A few tablespoons of olive oil
- Salt
