Babi chicken

Babi, in Piedmontese means Toad.
To give this chicken open it from the chest and crushing several times with the mallet.
Then soffregate the bird with salt and pepper.
In a pan, preferably cast iron, heat the oil and Brown the chicken on both sides in focus.
After a quarter of an hour add the clove of crushed garlic and the Rosemary, taking care to reduce the flame or else lose both the aroma and acquire a bitter taste.
After about half an hour drained well chicken cooking grease and serve dry and warm.
