Zucchini patties
Instructions
Check the courgettes, wash them carefully and dry them with a paper towel.
Coarsely cut using a kitchen mixer and place them in a large bowl.
Carefully rinse the parsley, dry it with a paper towel and tritatelo in the mixer.
Add the zucchini and add cheese, beaten eggs, salt and pepper.
Mix well until mixture is creamy and smooth and gradually add the flour.
Using the Palm of your hands, make that friggerete meatballs in hot oil for a few minutes until they are golden.
Turn occasionally, using two forks and when cooked place them on absorbent paper to remove excess oil.
Serve immediately hot and crunchy.
Trick: If the mixture gets too thick, reduce the amount of flour.
