Instructions
Wash under running water 300 g spelt beans, leave it to drain into a bowl, cover with cold water and let it soak for 12 hours.
Cook for 30 minutes in water, leave it to drain and blend.
Merge previously chopped parsley and garlic, 2 eggs, 60 g of grated Parmesan, salt and pepper.
Extract from dough balls, dip in breadcrumbs and FRY in hot oil.
Make them lose the grease on absorbent paper and serve on a bed of lettuce.
