Whitebait to judea
Instructions
In a bowl, mix the flour with oil, egg yolks and water (about one decilitre) to obtain a smooth mixture.
Let batter rest for an hour, then join the whitebait washed and well drained, chopped parsley and gently add the two egg whites mounted egg whites with a pinch of salt.
Fry the mixture in spoonfuls into the hot oil and, when the pancakes are golden brown and crisp, levatele with the slotted spoon, posatele on a paper towel and serve at the table well.

- 400 g of bianchetti
- 120 g of flour
- 2 tablespoons of olive oil
- 2 eggs
- 1 chopped parsley and garlic
- Salt
- Abundant of vegetable oil for frying
