Racy tomatoes
Instructions
The first thing to do is to prepare the tomatoes, then wash them, cut them in half, remove the seeds, svuotateli, squeeze the pulp and chop finely using a kitchen mixer.
Soon after, sprinkle the pretzels and let them drain upside down on a cutting board for about 15 minutes.
Meanwhile, prepare the sauce by melting the butter in low heat, pour the flour (sifted) and add the hot milk, stirring constantly with a whisk to remove any lumps.
Cook the sauce for about 10 minutes and then add salt and pepper.
Cut the mozzarella into small cubes and add to the sauce, add the chopped tomatoes, grated Parmesan cheese and mix well.
With the mixture, tomatoes and spolverizzateli filled with the breadcrumbs.
Arrange in a baking dish greased with oil, decorate with more olive oil and let them bake in the hot oven for about 20 minutes at 250 degrees.
When cooked, remove them from the oven, leave to cool and serve.
