Quail in sauce
Instructions
Chop the bacon and let it merge with the butter, combine quail, garlic crushed, 3 slices of lemon, Sage and olives pitted and chopped.
Sauté for a few minutes then add the wine and cook for 25 minutes on medium heat, basting with more wine if necessary.
When cooked, add salt, pepper and add 1 tsp.
anchovy paste diluted in juice of 1/2 lemon.
To taste and serve.

- 4 great quail
- 50 g of pork lard
- 2 cloves of garlic
- 50 g of green olives
- 3 leaves sage
- 1 lemon
- White wine
- 1 teaspoon of anchovy paste
- Salt
- Pepper
- 50 g of butter
