Ravioli of lung
Instructions
300 g of lung wash, clean it, beat it with meat tenderizer, blanche for 150 minutes in salted water and then chop and fry it in 2 tablespoons of lard with chopped onion.
Add salt, pepper and let simmer slowly.
Add a tablespoon of chopped parsley and 1 tablespoon chopped Marjoram, ispessirlo with 2 tablespoons of breadcrumbs.
Put this mixture in dollops on a sheet of pasta and ravioli from boil in salted water and drizzle with melted butter.
