Ravioli in pink
Instructions
Chop the onion and sauté in a little oil.
Add beets cut into small pieces, add salt and pepper and simmer for 5 minutes.
Passed to the mixer to get a fluid mixture.
Turn on the oven to 250 degrees.
Cook the ravioli in abundant salted water, place on a baking sheet and toss with sauce of beets and cheese.
Add a little olive oil, in the oven for a few minutes.
Garnish with chopped herbs and serve.

- 100 g of grated pecorino cheese
