Instructions
Peel and cut into small pieces, then regular vegetables Cook over gentle heat in a frying pan, for about twenty minutes, with 4 tablespoons of olive oil, salt and pepper to taste, stirring often.
Boil the rice in plenty of boiling salted water, drain it al dente and season immediately with a couple of tablespoons of olive oil, a pinch of oregano, Basil and chopped vegetables prepared.
Let it cool, then add the egg, slammed first into a bowl with a pinch of salt and pepper to taste.
Oil, grease a baking dish, pour in rice mixture and cook in the oven at 200 degrees already warm for about 20 minutes.
Serve immediately.
For this preparation, use the red onion of tropea, the more tasty than the white ones.

- 4 ripe tomatoes
- 2 zucchini
- 1 onion
- 1 egg

- Some leaves of basil
