Prepare a court-bouillon boiling for 45 minutes 4 l water 1/2 sliced lemon, a pinch of thyme, onion slices and a little pepper.
Filter the broth.
Cook the salmon in court-bouillon for 10 minutes.
Drain the fish and let cool, hold aside the head, remove the skin and bones.
Reassemble it on the serving platter with the head in its place.
Surround with slices of lemon and served with different sauces.
