Leek sauce
Instructions
Remove outer leaves of leeks, remove the green part, wash them, dry them and cut them into thin slices.
In a saucepan melt the butter and let insaporitevi leeks for a few minutes without coloring.
Sprinkle them with flour and mixing with boiling broth wet.
Cook for 10 minutes.
Retire the sauce, pass through a sieve and put on fire.
Add the lemon juice filtered to colander, cream and a little chopped fresh parsley.
Adjust salt and pepper.

- 2 leeks
- 25 g of butter
- 25 g of flour
- 50 cl of broth
- 1/2 cup of cream
- 1/2 lemon
- Little of fresh parsley
- Salt
- White pepper
