Instructions
Saute to fire sugar, remove and sprinkle with white wine.
Mince scallions, black pepper, Sage, thyme; squirt with vinegar; heat and reduce.
Add sugar, chillies and chopped anchovies.
Skim if necessary.
For boiled.
Ingredients and dosing for 6 persons
- 5 dried chillies
- 80 g of anchovy fillets
- 1 tablespoon of black pepper in grains
- 1/2 teaspoon of mustard
- 50 g of sugar
- 20 cl of red wine vinegar
- 1/2 cup of dry white wine
- 2 spring onions
- Sage
- Thyme
- Salt
