Salsa amatriciana
Instructions
Fry the bacon in a pan with the oil until crispy and dry well; Remove and keep warm.
Together with cooking the onion; When has add the tomatoes coarsely and season with a little salt and pepper.
Cook 8 minutes over high heat, and then add the bacon pieces.
Ideal for dry pasta.
Note: this is an old recipe which originally was not preparing the tomatoes; It goes back to previous eras, the introduction of this vegetable in Italy.
Ingredients and dosing for 4 persons
- 150 g of meat of lean pork cheek in large pieces
- 2 tablespoons of olive oil extra virgin
- 1/4 chopped onion
- 1 bit of chili
- Some of tomatoes (chopped)
- Little of salt
