Coffee Biscuits (Biscottini al Caffè)
Instructions
Sift over the flour dough with baking powder and add the melted butter, sugar, cold coffee, egg yolks, a pinch of salt, vanilla powder and grated zest of one lemon.
Knead the ingredients until dough is smooth and homogenous, reach into or a ball and let rest for half an hour.
After this time, remove dough from many small pieces, modellateli with the Palm of your hand to get the sticks of half a centimetre in diameter, and cut each of them into pieces of approximately 5 cm in length.
Fold in half each chopstick and wrap it up, then braid placed all cookies on buttered baking tray and cook in a preheated oven (180 degrees) for 20 minutes.
Before unloaded, check the doneness of the cookies by inserting a toothpick in the thickest part: if it comes out moist, bake the cupcakes again for a few minutes, then let them cool in the oven turned off.
To keep them crispy for a couple of weeks, store them in Tin boxes with lid.
