Wild beet timbale
Instructions
Wash the beets.
To wither in oil finely chopped shallots; Add the beets and let braise.
Squeeze and cannot chop finely.
In a bowl mix egg yolks, yogurt, salt and pepper.
Whip the egg whites with a pinch of salt and incorporate them to the mixture.
Pour into greased ramekins with oil and bake for 30 minutes in a Bain-Marie in the oven at 180 degrees.

- 800 g of wild beets
- 2 shallots
- 2 eggs
- 2 tablespoons of yoghurt
- 2 tablespoons of olive oil extra virgin
- Unrefined sea salt
- Pepper
