Vegetable pudding
Instructions
Boil separately in salted water the potatoes, Eggplant and green beans.
Drain the vegetables and dip the Mashers.
Add the breadcrumbs, parmesan cheese, eggs and a pinch of oregano.
Adjust salt and mix everything.
Place the mixture into a buttered baking dish, levelling and coat it with sliced onion.
Sprinkle with oregano, season with oil and butter, and bake at 170 degrees for 1 hour.

- 4 potatoes
- 2 eggplant
- 200 g of green beans
- 1 onion
- 2 eggs
- 1 handful of breadcrumbs
- 60 g of grana
- Oregano
- Butter
- Olive oil
- Salt
