Mackerel in white
Instructions
Cut the fish head, wash them, dry them, cut them into rather large pieces.
In a pan pour a quart of water and vinegar, add salt, peppercorns, chives, Bay leaves and cook on moderate fire for a quarter of an hour.
When it boils add the pieces of mackerel and maintain a light boil for seven to eight minutes.
Turn off and let stand for 5 minutes.
Drain It.
Pass the soup, add a knob of butter, sprinkle of dill and pour the whole thing on mackerel.
Let marinate several hours.

- 4 mackerel
- 1 leaf of laurel
- 1 cipollina
- 2 tablespoons of wine vinegar
- 1 tablespoon of dill
- 1 walnut butter
- Coarse salt
- Peppercorns
